Renowned chef to share sushi making tips and create four sushi rolls for onboard Asian-fusion restaurant

Andy Matsuda from the Sushi Chef Institute is to train Holland America Line’s chefs in the art of sushi making and produce four exclusive sushi rolls for the line’s Tamarind restaurants.

Japanese-born Matsuda has been making sushi for 35 years and teaches chefs from around the world at his Sushi Chef Institute in Los Angeles, California. He will teach HAL’s chefs the latest sushi trends and techniques, starting onboard newbuild Koningsdam.

"Sushi is extremely popular with our guests, and creating it is an art form that requires specific skills, techniques and in-depth training," said Orlando Ashford, president of HAL. "We are excited to collaborate with an expert of Chef Matsuda's calibre to ensure that our chefs are creating the most exceptional sushi at sea. Anyone who enjoys sushi is going to be very impressed by the presentation and flavours in his creations.”

In addition, Matsuda has created four signature sushi rolls, which will be featured on the dinner menu at Tamarind, the Asian-fusion restuarnt onboard Koningsdam, Nieuw Amsterdam and Eurodam.

These will include a Tempura Lobster roll with lobster tail, unagi sauce, avocado and asparagus; a Nigiri Seared Salmon roll with green olives and capers; a Dragon Roll with tempura shrimp, unagi sauce, avocado and asparagus; and Nigiri Tuna Zuke roll with yuzu-flavored tuna and guacamole sauce.
