Holland America Line is updating specialty restaurant Rudi’s Sel de Mer with a new Mediterranean bistro concept.
The Holland America Line culinary team developed the concept and menu for the venue with oversight by Chef Rudi Sodamin, the restaurant’s namesake. Dishes will reflect the cuisine of countries across the Mediterranean, including Italy, France, Spain and Greece.
“The new Mediterranean bistro concept allows us to diversify the menu at Rudi’s Sel de Mer and showcase the beautiful flavors and fresh ingredients that are synonymous with the region,” said Michael Stendebach, vice president of the food, beverage and rooms divisions at Holland America Line. “By refreshing the menu, we’re able to offer our guests a variety of dishes that appeal to a wide range of palettes, as well as some of the most popular dishes that have been mainstays on the menu from the start.”
A new starter menu will include a range of regional flavours, with dishes such as nicoise salad, foie gras torchon and roasted baby beets. Mains for both meat eaters and vegetarians are on offer, ranging from Greek spiced lamb chops and bone-in striploin to vegetable bourguigonne, while a selection of desserts includes salted caramel St. Honoré, warm strawberry tarte tatin and artisan cheese.
The new concept for Rudi’s Sel de Mer will roll out in January and February 2025 onboard Rotterdam, Niew Statendam and Koningsdam.
