In launching the Ship of the Future hospitality programme, a focus on sustainability is non-negotiable for BaxterStorey. The Reading-headquartered independent hospitality provider is seeing a generation of customers demanding mindful, low-carbon and zero-waste menus as well as transparency on the health and sustainable benefits of their food. The company’s Head of Travel Division, Eric Delaroue, sees a responsibility to continually develop and evolve how the company conducts itself as a business working towards being more sustainable, as well as reducing its carbon footprint with its drive to Net Zero by 2040. Partnering with industry experts allows BaxterStorey to increasingly educate its customers and develop new initiatives, creating a positive impact not only within its own industry, but also to a much wider audience. REVOLUTIONISING HOSPITALITY “We became aware that food waste can arise at every stage of the supply chain, starting in the farmers’ fields,” explains Delaroue. “Over seven per cent of fruit and vegetable produce grown in the UK never makes it to a plate, generating more than GBP 1 billion worth of food going to waste. Supporting organisations like Waste Knot, sees our teams create delicious meals using this surplus veg; and during 2022, we rescued 120,000kg of surplus produce.
